This recipe for meringues is easy to make and a tasty treat to eat on its own or to use as a fancy garnish on a cake.
2 large egg whites ( room temperature)
1 pinch salt
2/3 cup sugar ( sifted)
1/2 teaspoon lemon juice
1/4 teaspoon vanilla extract
Makes about 24
Preheat oven to 250F.
Line a couple of baking sheets with parchment paper.
Whip the egg whites and salt, to soft peaks. Add sugar a tablespoon at a time, whip egg whites well after each addition. Add in lemon juice and vanilla.
Fill a piping bag with a large star tip. Pipe small twirls.
Bake for 40 - 45 minutes, or until they are no longer moist. Let cool, remove from baking tray .
